Dried fish are a delicacy in the Ukraine and are usually eaten as snacks while walking around town. Old ladies sell them throughout Nikoleav on street corners and in bazaars. Carp, Perch, Chub and numerous other species are caught by men of the family, who fish nearby lakes, rivers and streams. The Bug River, which runs through Nikolaev, is a crystal clear body of water that is well known for producing the most ecologically clean fish in all of Europe.

Most westerners who visit Nikolaev are afraid to eat a dried fish head. Before turning away from such a delicious delicacy ask yourself this question: Have I ever eaten a greasy hotdog made from mysterious animal byproducts?

If you answer honestly, I think you'll munch down one of Nikolaev's all-natural, organic dried fish and never go back to processed western foods.
